Tiger Nut Porridge and How to Prepare It
My first hit on tiger nuts is the pudding. It saves me from engaging my jaw repeatedly since I’m lazy at chewing.
Step by Step Tiger Nut Pudding
Ingredients
- 2 cups tiger nut
- 1/3 cups local rice or perfume (Jasmine)
- 1/2 cups dark brown sugar
- 1 tbsp salt
- 4 cups water (add depending on nuts & rice)
Instructions
- Wash thoroughly and soak in water overnight or at least 4hrs to prep time
- In high-powered blender, add water, tiger nuts and rice together and blend
- Strain in a fine-mesh strainer to extract the milk
- Use a cheesecloth or silk scarf, place over the strainer and give it the final strain to trap any excess chaff
- Add the brown sugar
- Add salt
- Stir properly to mix ingredients
- On medium heat, use a whisk or rubber spatula to stir it continuously in the same direction
- Stir continuously till thickened and no longer tasting raw
- Turn off heat
- Pour into a serving glass to cool down
- Serve it warm or cold with or without evaporated milk

Equipment
- Blender
- Cheesecloth or nut milk bag simple dairy-free milk
Ingredients
- 1 cup tiger nuts
- 2 cups water
- 1 ½ vanilla bean
Instructions
- Wash thoroughly and soak in water overnight or at least 4hrs to prep time
- In high-powered blender, add water, tiger nuts and vanilla bean together and blend
- Separate milk from pulp with either cheesecloth or nut milk bag
